Quinoa Peanut Butter Bites

I'm always on the look out for delicious, healthy and protein-packed snacks. They allow me to stay fueled and happy.... much better than when I get "hangry" (a nasty combo of angry and hungry) which is never a good scenario for me, or anyone in my path. haha.

These little treat-snacks come from one of my favorite bloggers (Healthy Happy Mama) with my own little tweak. They are a perfect, no bake,  no hassle solution to those trying to eat healthy, even with a hectic schedule. Give them a whirl and let me know if you love them as much as I do!

INGREDIENTS: (makes 20 balls)

  • 1/2 cup quinoa, rinsed, cooked and cooled
  • 1 cup water (to make the quinoa)
  • 1/4 cup coconut peanut butter (I used Earth Balance)
  • 2 tsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp molasses
  • pinch of salt
  • optional to add chopped nuts
  • optional to roll them in coconut when done
  • optional to roll them in "magic dust" to make sweeter
  • magic dust is equal parts coconut sugar & almond meal (about 1/4 cup of each)

 

DIRECTIONS:

In a small saucepan, combine the quinoa and water and bring to a boil. Reduce the heat and simmer until all the water is absorbed (roughly 10-15 minutes).

Once the quinoa is cooked, allow it to cool, then add the rest of the ingredients and stir until it is all completely combined.  Using your hands, form the mixture into 1″ balls and place them onto a tray or plate. If you are skipping the toppings now is the time to place them in the freezer for 30 minutes, then transfer to the refrigerator.

If you are choosing to add toppings do so now with the chopped nuts, shredded coconut, or magic dust. Spread your chosen topping out on a non-stick mat and roll each ball in it for full coverage, or simply sprinkle it over the tops for partial coverage.  now, put them in the freezer for about 30 minutes to firm up.  Store in the refrigerator and grab one to enjoy every time the hunger demons start lurking!
