Mango Coconut Chia Seed Parfait

A delicious and refreshing way to enjoy breakfast or an afternoon snack. I discovered the magic of chia seeds about a year ago; they may be small, but a little goes along way in terms of added protein and fiber to your diet. I now throw them in oatmeal, baked goods, granola bars, jam, and smoothies... you name it, I've probably tried it.  So imagine my excitement when I discovered tons of recipes using them to create a gelatinous yogurt parfait!


The combinations are endless, but here is one of my favorites... feel free to play around with the flavors and discover your own favorites. If you want to have it ready to grab n' go, then make it in mason jars.



1 cup of coconut milk (or almond milk if you prefer)

1 cup plain Greek Yogurt (I use 2 percent)

1/4 cup chia seeds

1 tsp pure vanilla extract

2 TB maple syrup or honey

1 mango chopped and chilled



* combine all ingredients, except the mangoes in a blender

* layer the mixture with the mangoes in a mason jar (hint: leave at least an inch of room from  the top as the chia seeds will expand as they absorb the liquid)

* chill overnight

* when ready to eat top with silvered almonds, shredded coconut, or any other fruit you wish.
