Here is a fun recipe for the whole family to enjoy this coming labor day weekend. I've been getting creative in the kitchen trying to find ways to beat the heat. I came up with this great popsicle recipe and it has been a delicious way to cool down. An added bonus is that these little gems are anti-inflammatory and full of vitamin C and lycopene, which is great for your cardiovascular health.
1 small watermelon (or half of a large one)
Juice of 1 lime
Sprigs of mint
* optional to add honey to taste; or leave it out to keep it tart.
Slice the watermelon up into cubes
Combine in a blender with the juice of the lime and 2-3 mint leaves
Pour into popsicle molds leaving an inch of room at the top.
Then the next time things heat up, cool down with this treat!
